PÙ BIN SPECIALTIES

Steamed Fish (Cá Đồ)

Cá Đồ is a traditional dish, a specialty of Pù Bin. To make this unique dish, the main ingredients are fresh, carefully selected grass carp marinated with lemongrass, ginger, young papaya leaves, and mắc khén spice. The fish is then wrapped in dong leaves and steamed (đồ chín).

The steaming process helps the fish retain its natural sweetness, allows the spices to penetrate deeper, creating a rich flavor, a sweet and fragrant aroma from the fish, blended with the slightly bitter and nutty taste of the papaya leaves, resulting in an attractive, unforgettable dish.

Grilled Stream Fish (Cá suối nướng)

Grilled stream fish is a traditional dish of the Thái people. Fish weighing between 1kg and 1.2kg are chosen, cleaned, marinated with spices such as mắc khén, wild herbs, chili, and lemongrass, and grilled over hot coals, yielding an attractive aroma and delicious flavor.

Corn Wine (Rượu Ngô)

Corn Wine in Pù Bin is very special! The wine is made from leaf yeast fermented by the Thái ethnic people themselves using about 10 types of forest leave. Corn Wine has a sweet taste and a rich scent of forest leaves, does not cause headaches, and is less intoxicating than lowland wines. For the Thái people, Corn Wine appears at all important festivals and celebrations, becoming a cultural feature in their spiritual life.

Grilled Pork in Bamboo (Lợn Lam Nướng)

The characteristic flavor of Grilled Pork in Bamboo comes from the delicate combination of traditional spices: dried onion and shallots, hạt dổi (wild pepper seeds), and mắc khén… creating a pungent, fragrant taste that awakens all the senses.

The seasoned meat is placed into bamboo tubes and grilled over hot coals, helping to preserve the full aromatic and naturally sweet flavor of the dish.

Local Chicken (Thịt gà bản)

The chicken meat in Pù Bin is better than in other regions because the chickens here are naturally free-ranged on the hillsides. The chicken is sweet, fragrant, firm, and the skin is crisp. In particular, guests will be captivated by the delicious grilled chicken with the traditional marinating method of the Thái people here.

Pù Bin Agricultural Product

All agricultural products in Pù Bin are grown by the local people using traditional methods, without the use of harmful chemicals. Speaking of Pù Bin, one must mention the “giant” pumpkins, winter melons, peanuts, bamboo shoots, wild vegetables… The cool climate all year round and the fertile soil of Pù Bin contribute to the distinctive flavor of the produce that cannot be found elsewhere.
